I did some looking today, focusing on parsnips.  Didn't find any sort of
cake like thing for them, nor patties.  The most common preparation was
steamed.  It could be it's a cook's original recipe.

For sure.  We've got a battalion dinner Friday night, another one (for
our insurance group) Saturday.  I've got to provide a side dish for the
first, just myself (and Steve) for the second.  There are medical
appointments and church activities  as well.

They're usually available the week or so before Thanksgiving.
