There are. I don't know what the percentage is, but some clever
person can do a Web search - I'm sure the data are not too hidden.

Suburbia and exurbia are isolating places. People who find themselves
wheels-free and out of the range of public transport can become quite
lonely indeed.

But most of the cities have some kind of public transport,
albeit often not particularly good. So there's an influx of
the lame and halt into these cities. Often a person's activities
and lifestyle can be dictated by the bus schedule. I have a friend
whose sister relied on a bus that was recently discontinued to
get to work some ten miles away from where she lives: she will
have to either find a new job or get friends and relations to
drive her around.

Too many of us are hand to mouth, and if there's no money coming in,
beer consumption has to be curtailed, incredible though that may
seem to you.

The damage will in all probability be less spectacular in
appearance, though sufficiently fatal.

San Fran is the airport where once the security screener performed
a simulated sexual act on my posterior, speaking of trouble.

Okay. Shepherdesses' Thighs With Fresh Rosemary.

Candied Grapefruit Peel
categories, Gourmet, citrus, candy
yield: Makes about 45 strips

2 sm grapefruits
1 c granulated sugar
1/2 c water
1 c superfine granulated sugar

Preparation

With peel still on fruit, quarter peel lengthwise then remove, keeping 
pieces of peel intact. Reserve fruit for another use. Diagonally cut 
pieces of peel into 1/3"-wide strips.

Put peel in a 3-qt saucepan filled with cold water and bring slowly to a 
boil over moderate heat. Boil 1 min and drain. Repeat procedure 4 times 
to remove bitterness.

Have ready a lightly oiled large rack set in a shallow baking pan.

Bring regular granulated sugar and water to a boil in a large heavy skillet, 
stirring until sugar is dissolved. Add peel and boil, stirring, until most 
of syrup is absorbed, about 10 min.

Turn out peel onto rack, separating pieces. Dry candied peel, uncovered, at 
room temp until only slightly sticky, 4 - 8 hr. Toss, a few pieces at a time, 
in superfine sugar, shaking off excess.

Cooks' notes: 
If sugar syrup begins to crystallize on peel, turn out of skillet 
immediately. Peel will still be good but will have a different appearance
and won't need a sugar coating. 

Candied peel keeps in an airtight container at room temperature 1 week or 
chilled 1 month. If chilled peel becomes too moist, pat dry and reroll in
sugar.
