Ärende: Re: IT COLD HERE! 80202
===============================
-=> Quoting Glen Jamieson to Jim Weller <=-

JW> The forecast for the next two nights is now -48 C (-54.5 F).
JW> We had another power outage but this time it only lasted 20 minutes.
JW> The transformer oil is freezing in the transformers at the
 JW> sub-station.

GJ> Wow! That would be something! Transformers overheating because of
GJ> the cold freezing the oil in the cooling pipes so it doesn't circulate.
GJ> What can they do? Wrap blankets around the pipes before they freeze?

I'm not sure what the fix is.

 JW> the steam truck operator

GJ> What does he do? Use live steam to heat your pipes?

He has three tools:

-1- 1 1/2 inch lines connected to a truck mounted boiler that can
produce high pressure steam or very hot water. This is useful for
thawing large diameter sewer lines. It is also useful off season
as a pressure washer for buildings, canopies and vehicles.

-2- small diameter hoses that can be snaked down 1/2 inch water
lines. They feed from and recycle to a large bucket with an
immersion heater in it.

-3- a transformer with cables and clamp (a "hot shot" or "buzz box")
that uses direct current to warm copper lines from the resistance
to the current. This only works if the section of copper pipe you
want to warm is not grounded somehow.

GJ> Why don't you drink the melted snow? It should be at least as pure as
 GJ> rain water.

Even the cleanest, whitest snow bank has a lot of wind blown seeds,
tree bark and twigs, dirt and gravel in it. I was surprised how
clean the snow looked and how much muck was in the melted water. I
could filter it and drink it in a pinch either boiled for tea and
chlorinated with laundry bleach but why bother when it's easy to
fill jugs. We visit my step-daughter 4 blocks away daily for showers
and refills and I could go next door to my neighbour even quicker if
I chose to.

GJ> You mean you don't run out from your sauna to roll naked in the
 GJ> snow?

Not at -40. It's invigorating fun at -5 though. Especially if
Akvavit is involved.

JW> Another quirky note: the eastern arctic is enjoying a warm spell
 JW> simultaneously; it is only -15 C (+5 F) at Alert, just 500 miles
 JW> from the north pole!

GJ> Watch out for a volcanic eruption there.

Hasn't been one there for over 60 million years. It's just the
result of a strong warm south east wind.

Title: Cantonese Velvet Chicken with Broccoli and Ham
 Categories: Chinese, Ham, Chicken
      Yield: 4 Servings

      1 Skinless Boneless Chicken
           Breast; (About 6 Oz)
      1 Egg White
    1/4 ts Salt
  2 1/2 ts Cornstarch
      1 qt Peanut Oil
      1 ts Peanut Oil
    1/3 c Chicken Broth
3 tb Shao Hsing (Chinese Rice
           Wine) Or Dry Sherry
    1/2 ts White Vinegar
    1/2 ts Sugar
    1/2 ts MSG; Optional
    1/8 ts Ground Black Pepper
  1 1/2 c Small Broccoli Flowerets
      1 tb Paper-Thin Fresh Ginger
           Slices
      1 tb Chopped Garlic
      8 Pcs Smithfield Ham (About
           1/2" X 1/2" X 1/16" Each)
      6 Baby Corn
    1/2 ts Chinese Sesame Oil

Freeze the chicken breast slightly and cut on the bias into thin,
broad slices. Mix with the egg white and the salt. Stir vigorously
until the egg white foams. Add 1 teaspoon of the cornstarch and 1
teaspoon of the peanut oil. Blend well. Let sit, unrefrigerated and
covered, for 1 hour. While the chicken is sitting, prepare the sauce:
mix together the chicken broth, shao hsing, vinegar, sugar, MSG, and
black pepper. Mix the remaining 1 1/2 teaspoons of cornstarch with
enough cold water to make a milky cream; add to the sauce mixture.
When ready to cook, heat remaining 1 quart of peanut oil in a wok to
375F. Add the chicken slices and deep-fry for 20 seconds. Remove to
paper towels. Add the broccoli flowerets and deep-fry until just
cooked, about 1 to 2 minutes. Remove to paper towels. Drain all but 1
tablespoon of the oil. Over moderately high heat, stir-fry the
ginger, garlic, ham, and baby corn in the remaining oil for 1 minute.
Increase heat to very high, and add the sauce mixture. When it comes
to a boil and thickens, add the chicken, broccoli, and egg white
chunks. Stir quickly, turn off heat, add the sesame oil, and serve.
