      Title: Colo De Mono - Chilean "Irish Coffee"

      5 c  Milk- whole
      2    Cinnamon sticks
      5    Cloves- whole
    1/2 c  Sugar
  2 1/2 ts Coffee- instant
  1 1/2 c  AGUARDIENTE, 50 proof
      1    Egg yolks; beaten lightly
      2 ts Vanilla essence
 
  Cola de Mono is typically enjoyed over the holidays, especially on
  Christmas and New Year's Eve. On these special days, Chileans
  wander from house to house, knocking on doors and sharing COCO DE
  MONO with a slice of PAN DE PASCUA. The creamy drink, which is
  very popular in central Chile, contains several spices and packs a
  punch.
  
  There may be as many different origins for the drink's name, which
  is translated "Monkey's Tail," as there are recipes. Some Chileans
  suggest the name owes itself to the drink's colour, which is brown
  like that of a monkey's tail. Others argue that bottles of the
  concoction were sent to Chile from Spain with a monkey embossed on
  the labels. However, the more colotjul and bandied about theories
  lie with a storied Chilean called Pedro Montt.
  
  Those who want to make Montt look like.a bit of a monkey claim
  that the drink's name stems from the presidential electioN he lost
  in 1901. When one loses something Chileans say that they are lift
  con c;ola, or "with a tail." The followers of German Riesco, who
  vanquished Montt for the presidency, celebrated the victory at a
  bar where they were served a drink that they dubbed "Cola de
  Montt." The nomenclature soon metamorphosed into something a bit
  more animated, combining as such perhaps because Montt's
  complexion was dark like a monkey's and the Riesco camp was
  calling him a "cola," which is pejorative in Chile for homosexual.
  
  Yet, in another version, Montt saved face - when he became the
  proud president of Chile (1906-1910). Here we find President Montt
  at the party of the widow Filomena Cortes, who titillated many a
  bachelor's stomach with her cuisine, along with her four single
  daughters, who charmed many an ear with their heavenly guitar and
  harp playing. When Pedro finally decided to turn in for the night,
  he asked someone to fetch his Colt revolver. However, attendees,
  concerned by the blistering downpour that evening, pretended not
  to be able to find the revolver so that the party would go merrily
  on. With most of the wine and liquor already down the hatch, they
  could only muster up milk, coffee, aguardiente, and sugar. But how
  well they blended together! The frolickers called their new
  serendipitous masterpiece, "Colt de Montt."
  
  1. Put the milk, cinnamon sticks, and cloves in a medium-size
  saucepan and bting to a boiL Reduce the heat to low and simmer,
  stirring frequently. Continue to simmer until the milk takes on a
  pronounced flavour from the cinnamon and cloves, 15 to 20 minutes.
  Mix in the sugar and coffee, and then let the mixture cool.
  
  2. When it has cooled, discard the cinnamon sticks and cloves. Mix
  in the aguardiente, egg yolk, and vanilla extract.
  
  3. Pour the mixture into bottles and keep refrigerated. The drink
  stays good for a couple of weeks. Shake it thoroughly before
  serving.
