Ärende: Christmas Breakfast

Hi Carol and everyone,

Ruth and I hope everyone is having a merry Christmas.

We tried a new recipe for our Christmas breakfast.  As usual, we
modified it a bit from the original.  For starts, we made a half-recipe
and made a couple of substitutions, but it turned out quite good.  The
recipe is posted below.

What did you do for breakfast?


MMMMM----- Recipe via Meal-Master (tm) v8.04

      Title: Blueberry Stuffed French Toast
 Categories: Breakfasts, Breads, Cheese/eggs, Fruits
      Yield: 8 Servings

           Strata:
     12 sl Bread, home-style white;
           Firm
      2 pk Cream cheese, 8 oz, cubed
      1 c  Blueberries
     12 ea Eggs, large
    1/3 c  Maple syrup
      2 c  Whole milk
           Blueberry Sauce
      1 c  Sugar
    1/2 c  Water
      2 c  Blueberries
        pn Salt
    1/2 ts Cinnamon
      2 tb Orange juice
      1 tb Unsalted butter

  For the Strata:
  1.  Remove crusts from bread and cut bread into 1-inch cubes.  Spread
  half of the bread over a buttered 9x13 inch casserole.  Scatter
  cheese and then blueberries over bread.  Top with remaining bread.
  2.  Whisk together eggs, syrup, and milk.  Pour over casserole, cover
  with plastic wrap, and chill overnight.  Let sit at room temerature
  for 30 minutes before baking.
  3.  Position rack in center of oven and preheat oven to 350 degrees F.
  Remove plastic wrap and cover casserole with foil.  Bake 30 minutes.
  Remove foil and bake until puffed and golden, about 30 minutes longer.
  Serve warm with blueberry sauce.

  Blueberry Sauce (Makes about 2 cups)
  1.  Whisk together sugar and water in a small saucepan.  Bring to a
  simmer over medium high heat, stirring, and simmer 2-3 minutes. 2.
  Stir in berries (thaw first if frozen), a small pinch of salt,
  cinnamon and orange juice.  Bring back to a simmer, reduce heat, and
  simmer until blueberries burst, about 15 minutes.  Swirl in butter and
  serve warm.  Sauce can be made ahead and reheated.

  Notes:  We made this as a half-recipe in a 8x8 pan.  We also used
  homemade whole-wheat bread and used some left-over cream and soy milk
  in lieu of the whole milk.  The sugar we used was raw sugar.  Bread
  can be cut into star shapes for the top layer and the rest used for
  the bottom later if so desired.

We got ourselves one big Christmas present, which will arrive probably
after the new year.  The local Select Comfort store had a special
edition bed on sale for 50% off, so we ordered one.  It should be a
whole lot more comfortable than our current bed.

Otherwise, I got Ruth a Swaroski crystal pearl necklace in a lght blue
color.  They are interspersed with small faceted crystals.

She made me a pair of flannel lounge pants that I will enjoy.
