My mother made an ambrosia.  As I recall, it was fresh cut oranges and
shredded coconut.  I can remember watching her do the oranges.  She
would peel the skin and pith off with a sharp knife, letting the juice
drip into the bowl.  Then she would cut out the wedges one at at time --
down one membrane and up the other.  Seeds (if any) would get picked out
from the bowl.  She got a fresh coconut and shredded it herself.  I
don't think that there was anything else in the dish.

It seems that ambrosia is a dish that has many variations -- including
ones that bear little resemblance to each other.

We'd never heard of boxing day until we moved to England.  Is it a
Canadian custom as well as a British one?

I was aware that the Orthodox and Roman rite holidays were on different
schedules.  Is the Russian Christmas a fixed date or does it float on
our calendar the way Easter does?

I seem to remember that Mother was very stanch about "tree down on New
Year's".  We don't have any fixed time to take down our decorations --
but probably by the second week of January they will be down and boxed
for next year.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Delaware Baked Eggs
 Categories: Egg, Cheese
      Yield: 1 servings
 
      2 tb Butter
      1 c  Grated sharp cheese
      4    Eggs
      4    Dashed of hot pepper sauce
      4 ds Or worcestershire
    1/4 c  Ketchup
    1/2 c  Light cream
           -buttered toast
 
  Put butter into a baking dish that is at least 2 inches deep.  Warm
  dish long enough to melt butter.  Cool dish so eggs will not set but
  butter will remain liquid.  Sprinkle one half of cheese over butter.
  Break eggs into 4 separate spaces, far enough apart sothey will not
  run into each other.  Put dashes of hot pepper sauce and
  worcestershire in center of each egg yolk.  Spoon ketchup over yolks.
  Pour in cream.  Sprinkle remaining cheese over eggs.  Bake in
  moderate oven (350F) until eggs are set.  Serve each egg on a slice
  of buttered toast and spoon the pan sauces over it.  Makes 4 servings.
