     Title: Tom's Scallops And Risotto

           wine opt'l

           Parmesan
           white truffle oil

The difficulty of Risotto is one of those lies that Italians tell
people to give their culture a false sense of weight.

Don't worry, risotto is so easy that even a simple minded man like
myself can make it.

All you're doing is sweating some garlic, onions, shallots,
mushrooms etc. in a good amount of olive oil then adding the rice
(special risotto rice or farro, called spelt at hippy grocers) and
toasting it a bit with the garlic and the whatnot.

Then you start adding stock and/or wine a bit at a time as the rice
sucks it up. Keep the temp fairly low so it doesn't burn as you do
this. Stir! Stir!

Now all you do is taste the damn thing every once in a while to see
what the texture of the rice is like.

Once it has gone soft enough to eat yet firm enough to have a good
texture you can add your salt to taste and maybe some grated parm.

Stir this in until it incorporates and you're done.

I like to cheat and add a bit of white truffle oil to it right
before I serve it for a bit of added awesome.

Remember that you're going to be chained to the kitchen stirring
this bitch every minute or so and adding stock so have a bottle of
wine near by that is full.

This is a great recipe when the ladies come over because A) risotto
sounds fancy and B) it looks like you're cooking the shit out of
stuff when you're actually doing nothing.

A tip is to get the gear and scallops ready to fire as soon as the
risotto is turned off the heat. The scallops cook so quickly that
timing is a non-issue.

Relax Andre. Cooking ain't shit.
