Now that I think about it, I could eat burgers
every day. Of course, I could eat a steak every day.
For someone with a wide-ranging and experienced
palate, I'm easy to please.

Agreed, but it must be cooked the way I ordered it.
If I order it rare, I expect it to be rare, unless
they say, oh, the county health department says that
we have to cook everything medium. In which case if
it comes medium-well, back it goes. If they said,
oh, the county health department says that we have to
cook everything medium-well, that would be okay: I'd
either go with that or order something else.

I can't say I fully appreciate either of these, though
the Castleburgers have their odd mushy appeal.

Whoa, sounds as though you were talking about ginkgo
nuts or angel food cake or something. And all for a
piece of steer meat destroyed by a metal grinder!

MMMMM---------------------------INGREDIENTS--------------------------------
    500 g  minced meat
      1    french roll; soaked in white
           -wine
    1/2 ts freshly ground pepper
     50 ml Liquamen; (can be replaced
           -by 1/2 tsp salt + a little
           -white wine)
           some stone-pine kernels and
           -green peppercorns
           a little Caroenum
           Baking foil

Unfortunately the exact cooking temperatures and times haven't been handed
down in all cases. You have to rely on your gut feeling. But I hope you
enjoy all of it nonetheless!

Mix minced meat with the soaked french roll. Ground spices and mix into
the meat. Form small burgers and put pine kernels and peppercorns into
them. Put them into baking foil and grill them together with Caroenum.
