Speaking of not making much sense. Do you in your upside-down
ivory tower think that the American press is not capable of
ferreting out any possible dirty laundry that the corporations
care to air, even if it be in the Elko Gazette?

I went to a Jordanian restaurant today, suggested by the bassoon
players. Had a gyro-like thing (2 oz of meat, pita bread) with
a baba ghanouj-like thing (heavily parslied, very strange), and
a couple falafels. When he saw my brow wrinkle slightly at the
taste, he brought out a little cup of hot sauce, which between
the two clarinet players and me lasted a few bites only, whereupon
we received more hot sauce, thank goodness. It wasn't incredibly
hot - probably serranos, roasted and chopped with an equal quantity
of tomato and a few bits of parsley and onion.

There's a wine tasting tonight right before the concert. I am
however toying with the idea of not having any wine, as the
concert is a hard one (Bartok Concerto for Orchestra).

Yu sheng
cat: Chinese new year, appetizer
yield: 1

preserved cucumber strips
preserved vegetable strips
red ginger, julienne
yellow ginger, julienne
pickled leek, julienne
sliced jellyfish
sesame seeds
ground peanuts
mandarin orange peel, julienne
preserved melon, julienne
carrot, fine julienne
white radish, fine julienne
pok chui crackers
raw salmon slices* and lime
peanut oil
plum sauce
red packets of pepper
green packets of cinnamon powder

* many kinds of fish may be substituted

Arrange the first 10 ingredients in little piles
on a serving plate, around a big pile of carrot
and radish in the center.

The server says "gong xi fa cai" (congratulations
and may you be prosperous) and "wan shi ru yi"
(may everything go according to your wishes).

While squeezing lime over the fish the server
says "da ji da li" (good luck and blessings).

Arranging the fish over the carrot and radish,
the server says "nian nian you yu" (may you have
an abundance of wealth every year).

While sprinkling pepper over the dish the server
says "hong yun dang tou" (may good luck be at
your doorstep).

While sprinkling cinnamon over the dish, the server
says "qing chung chang" (may you be forever young).

While pouring the oil over, the server says "rong
hua fu gui" (may you enjoy prosperity).

While pouring the plum sauce over, the server says
"tian tian mi mi" (may sweetness enter your life).

Adding the pok chui crackers the server says "man
di huang jun" (may gold fall at your feet).

Toss the entire mixture together, everyone saying
"yue lao yue qu, lao dan feng shen shi qi" (toss
higher and higher until the wind and oceans rise
up, for a good year ahead).
