There is a reasonable amount of evidence that points to chilli being of Central
American origins, migrated to islands in the Carribean, thence to the coast of
North America in the swampy areas now known as Louisiana and Tejas.

Here is the accepted spellings of the Chileheads Mailing List * (admittedly not
the AP or NYT Style-book)

chilli (chili) for the meat, red chilies and spices stew that has become known
as a "bowl of red"

chile verde for the dish of meat, green chilies and spices dish popular in the
American Southwest (but, spreading fast).

chile for the seed pods of the capsicum, bacatum, frutescens, or chinense
plants.

chilies is the accepted plural of chile.

chile powder consists of pure ground chile pods with no additives other than
anti-caking agents

chilli (chili) powder refers to the spice/herb/mineral blend used to flavour a
pot of chilli (chili).

I agree on the teriyaki sauce. There is a limited range of dishes that teriyaki
enhances ... IMO.

2 ts Ground cumin; more to taste
      2 tb Coriander seeds; crushed,
           - soaked in a scant bit of
           - water
      2 Bay leaves
1 bn Cilantro leaves; clean, chop
      4 c Chicken stock

  * available from Pendery's (www.penderys.com)

Season the pork meat generously with salt and pepper,
lightly flour. Heat oil in a heavy-bottomed skillet over
medium high heat and brown pork chunks well in small
batches, on all sides. Lift pork out of pan and place in
a wide soup pot. Discard fat and place the onions and
peppers in the same skillet and sweat over moderate heat,
stirring occasionally until limp, about 5 minutes. Add all
of the chiles and cook an additional 3-4 minutes, then add
the garlic and cook 1-2 minutes more.

Add the Sauteed vegetables, chopped tomatillos, dried
herbs and cilantro to the meat, cover with the chicken
stock and bring up to a boil and reduce to a slight simmer.
Cook for 2-3 hours uncovered or until the pork is fork
  tender.

Adjust the seasoning to taste with salt and pepper.

Serve with red rice for a delightful contrast.
