GJ> Have any of your mines closed?

JW> Not yet. BHP's Ekati mine has slowed expansion and laid off some
JW> construction contractors but not their own employees. De Beers has
JW> shelved plans for a second mine and will shut down for 4 weeks twice
JW> a year to reduce production and expenses, but no permanent layoffs.
JW> Rio Tinto's Diavik mine has just announced reduced hours too. Six
JW> week shutdown this July and another six weeks next January. Ray is
JW> affected by that; he will be able to cope with the reduced income
JW> but will definitely be cutting back on his life style.

Which will probably affect yours - not so many moose bits gifted.
Once people become accustomed to working regular overtime their
expenses expand to match income. Then the cutback comes...

GJ> and there to be more residents looking for work,
 JW>
JW> Interestingly enough, our unemployment benefit applications have not
JW> gone up. The NWT was lost 1100 jobs out of a labour force of 20,000
JW> but also seen a population drop as the unemployed tend to go home.
JW> Many northern workers were not really northern residents but
JW> commuters. Yellowknife's apartment vacancy rate is holding steady at
JW> a low 1% but the hotel room vacancies have gone from 0% to 52%.

Interesting. I didn't realise you had so many transients. Were there
many from South of the border, down USAn way?

GJ> and repairing their old dog sleds instead of just buying new ones
GJ> every harp seal clubbing season.

JW> You still haven't grasped the concept of how large the NWT is or how
JW> far inland I live. You're as likely to find a seal in Yellowknife as
JW> a penguin in Alice Springs.

The map shows you have lots of water nearby in lakes. And it is only
600km to the sea at the Bathurst inlet. OK, so you don't use your dog
sleds to go seal- or even night-clubbing. Just race them.

The Melbourne Aquarium has just opened a penguin section, so it would
be possible for something like that to be done in Alice Springs...

JW> My next set of taglines are a summary of all the new truth in
JW> labelling laws that just came out....

I like them!

MMMMM----- Recipe via Meal-Master (tm) v8.05

      Title: DORINDA'S KUBECAKE [COCONUT RUMBALLS]
 Categories: Smlcakes, Sweets, Gifts
      Yield: 18 servings

    500 g Coconut- desiccated; OR
    500 g ; coconut meat, grated fine
    200 g Ginger root; peel/grate fine
    200 ml Rum; pref Appleton
    315 g Sugar- castor

Preheat oven to 120^C. In a large mixing bowl, combine coconut &
ginger with the run [till, if using, desiccated coconut is
re-hydrated & softer.] Keep mixture in a pre-heated oven [not too hot
because the alcohol might all evaporate].

Melt sugar in a heavy-based pan on medium-to-low heat. When sugar
starts to brown at the edges, stir with a wooden spoon, crushing any
lumps as it continues to brown, till melted sugar is smooth & runny.
When sugar is completely brown [a little darker than caramel],
  quickly add coconut/rum mixture.

Timing is critical. The mixture may bubble but ignore it & stir
vigorously till sugar is blended with all ingredients. Remove from
heat. Cool for about 30 minutes.

Moisten your hands with some cold water, take up small amounts &
squeeze & roll in one hand to form into firm rounds about the size of
table tennis balls. Serve on small, green banana leaves dusted with
sifted icing sugar, or refrigerate & serve later as you wish.
Alternatively, serve the coconut rum loosely in small mounds on
banana leaves to be eaten with the fingers.

NOTE: the trickiest part is the timing of the sugar temperature during
browning, so stay close & keep a critical eye on the process.
