I am not sure if i answered this!

A decent sub often for Mirin is rice wine vinegar.  Use less generally than
the mirin or sake.  In fact, i ususually even with mirin or sake, use 1/2
what the recipe calls for.

White wine vinegar and apple guice or better yet, white grape works for the
wine ones.  Use red wine vinegar and either white grape or a mix of white and
purple for the red ones.

I'm sure I've had many things out that had wine in them (infact, the scallop
dish up in Bemerton was with sherry 'gravy' on the side) but generally I just
dislike the idea.  I am sure there's a little taste difference in the dishes,
but I dont care as long as the results taste good.

Naw, he's just watching mystified as new clothes arrive.  When you catch up,
you'll see the freecyle bunch too but that was a good deal!  I have lots of
bottom pieces now.  Just need tops and to tailor the jacket sleeves (a few of
them can be rolled up and look like they were meant to ne done that way).
