   That is true, and they are.  The tips are their real source of
   income.

   I am not sure, but believe that the internal revenue will assess on
   an assumed amount if they believe there is under reporting.    Tips
   that the wait staff receive which were entered on the credit card get
   totaled, paid to them directly, and reported to IRS.   Cash tips that
   they receive are certainly subject to under reporting -- and it is
   said that many of them do just that.

   AYCE places are quite common here, and come in a variety of flavors.
   Chinese AYCE are prevalent (we have a favorite one not far from us).
   Basic American menu AYCE is offered by several chains, and are also
   widely available.   All of the above are inexpensive -- usually less
   than $10 per person and at most $14 per person.   At many of them the
   drinks are an additional cost (perhaps $2 but with unlimited refills
   for tea and soda).

   You might also find AYCE places which claim to be a higher standard
   and charge as much as $30 or even more.  These are most often those
   with lots of seafood available.

      Title: Italian Beef and Potatoes with Peppers
 Categories: Main dish, Beef
      Yield: 4 Servings
 
      2 ts Olive oil
      2 sm Green,red or yellow bell
           - peppers,seeded and sliced
           - into 1/4 inch wide strips
      1 c  Sliced onion
      2    Cloves of garlic, minced
     12 oz Pre-sliced stir-fry beef
           - strips
  1 1/2 c  Thinly sliced mushrooms
    1/4 c  Water
      2 tb Balsamic vinegar
      1 ts Dried oregano
    1/2 ts Salt
    1/4 ts Pepper
      4 c  Hot mashed potatoes (made
           - from frozen or instant
           - mashed potatoes
 
  :    Heat oil in large nonstick skillet over medium heat. Add peppers,
  onions and garlic; saute 5 to 7 minutes until vegetables begin to
  soften. Add beef and mushrooms; toss 2 minutes.
  :    Reduce heat to medium-low, cover and cook until beef is cooked
  through, about 3 minutes.
  :    Stir in remaining ingredients except mashed potatoes; simmer 1
  minute. Serve immediately over mashed potatoes.
