Antoine's.  Seats 900.  Waiters/waitresses have to pay for their
own uniforms, as well as a weekly "fee" for the privilege.  Of
course, they make a good deal in tips from customers, making it
all worth while.  :)

Waiters and waitresses are exempt from minimum wage legislation.
Kitchen crew are not.  IOW, kitchen crew must be paid at least the
minimum wage.  Waiters and waitresses can be paid below minimum
wage.  Classifying kitchen crew as waiters/waitresses would be
a way to skirt minimum wage legislation.
