You have been a lot further in that part of the world than I have so
far.  Lots to explore there.  I don't think I would enjoy Burma,
though, because of the politics there.

That is the sort of thing I like doing in a country like that.  The
food served by expert chefs in the high class restaurants is one
extreme, and most enjoyable, but to get the feeling of the general
population it is also great to eat the food of the locals at street
stalls, food malls and your "motorbike shops".  In Indonesia there are
the "kaki lima" (literally "five legs") vendors, who push a two-wheeled
barrow with a single support leg at the back.  (Plus the vendor's legs,
that makes 5).  They fry or grill delicious little snacks while you
wait, and the cost is tiny.  Same sort of thing in the Philippines.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Breadfruit Chips
 Categories: Snacks, Asia-se, Charmaine
      Yield: 1 servings
 
           Breadfruit
           Turmeric- ground
           Salt
           Coconut oil; to deep fry
           ;or peanut oil
 
  Choose a firm, unripe fruit and remove the skin with a sharp knife.
  Cut lengthways into 6-8 wedges, then cut each wedge crosswa s into
  very thin slices, no more than 2mm thick. Sprinkle lightly with
  ground turmeric and salt, rubbing evenly over the slices Leave for 15
  minutes, then dry on paper towels to absorb as much of the moisture
  as possible.
  
  Heat oil for deep frying (coconut oil is traditional but peanut oil
  is more readily available, and healthier) and fry a handful of chips
  at a time on medium high heat. When golden brown remove on a slotted
  spoon and drain on paper towels. Continue until a l the chips are
  fried. When quite cold store in an airtight container and use within
  a week.
