If you're going to finish in Memphis ... May 14-16, 2010 is when to wind up the
tour ... at the Annual "Memphis In May" world championship (their version) BBQ
cook-off.

Unless you want to make this a real odyssey you'll need to do two tours, I
think. Those who favour the BBQ of Baja Oklahoma and Kansas City could start at
KC - hitting Arthur Bryant's, Jack Stack BBQ, and Ollie Gates' BBQ. Then south
to Taylor Cafe in Taylor, TX for lunch, on to Elgin's Smokehouse or Southside
Market & BBQ in Elgin, TX for supper. Overnight in Austin, TX where you can do
two days including Stubb's BBQ, Ruby's BBQ & Catering, Iron Works BBQ,
Lambert's BBQ (Stubb's and Lambert's feature live music so wear your s4!+
kickin' boots) and/or County Line on the Lake. Then US 183 south to Lockhart,
TX for Smitty's Market (formerly Kreuz Market) and Black's BBQ. Finally to City
Market and Luling BBQ. On the way out of Tejas toward Louisiana Goode Company
Barbeque 1 in Houston as well as Thelma Bar B Que.

In Cajun country start with Nana & Papa's Cajun Barbeque in Jennings, Hi-Ho
Barbecue and Bar-B-Que Station in Hammond and near-by Independence. Overnight
in Nawlins and then off toward Memphis through Mississippi

Stopping at Sonny's Real Pit BBQ for lunch and Hickory Pit in Jackson, MS then
on to B's Hickory Smoke BBQ in Oxford and Burns Bar BQ in Batesville, then
north to Coleman's Bar-B-Q in Senatobia and Old Style Bar-B-Q in Olive Branch. 

For those who would like a flutter at the Bingo or other games of chance, the
Casinos at Tunica are nearby. As is Memphis ... by the end of which time all
should be sated on Rib-A-Cue. And we can spend  some time comparing notes with
those who went the eastern route ... for which I will post a proposed itinerary
when I get around to it.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Carolina BBQ Pork
 Categories: Pork, Bbq, Sauces, Chilies
   Servings: 9 Servings

      2 lg Onions; quartered
      2 tb Brown Sugar
      1 tb Paprika
      2 ts Salt
    1/2 ts Ground black pepper
      5 lb Boneless pork butt

MMMMM--------------------------SAUCE--------------------------------
    3/4 c  Vinegar
      4 ts Worcestershire sauce
  1 1/2 tb Crushed chile flakes
  1 1/2 ts Sugar
    1/2 ts Colmans dry mustard
    1/2 ts Garlic granules
    1/2 ts Cayenne

MMMMM-------------------------ASSEMBLY------------------------------
           Hamburger buns
           Creamy cole slaw; opt 

  Put onions in stoneware crockpot. Combine brown sugar, salt
  and pepper, and paprika; rub over the meat. Place roast on
  the onion.

  Combine vinegar, Worcestershire sauce, chile flakes, sugar,
  mustard, garlic and cayenne; stir to mix well. Drizzle about
  one third vinegar mix over roast; cover and refrigerate the
  remainder of the sauce.

  Cover crock and cook on LOW for 10 to 12 hours or HIGH for
  4 to 6 hours. Drizzle about 1/3 of the reserved vinegar mix
  over the roast during the last half-hour of cooking.

  Remove meat and onions, drain. Chop or shred meat and chop
  onions. Serve meat and onions on buns. If desired to with
  coleslaw. Pass remaining sauce to drizzle on sandwiches.

  Serves 8 - 10 people
