 Sounds an excellent plan.

 Similar..
 
 Cleaning up at the farmers market, I found a huge head of cabbage.
 Almost free it was. So in the big kettle I bought for frying turkey 
 it went, cut up.
 
 Five pounds of Michigan White potatoes for friends.  A handful of
 Kosher salt, good cover of black pepper and two cans of Hormel's 
 corned beef product for grease.  Real comfort food when accompanied 
 by a loaf of good bread for juice sopping.
 
 Some got froze, and some went in the fridge.  Guess I didn't cook it 
 long enough because two days later, the stuff in the fridge was making 
 bubbles and tasting sour.   Let it sit for another couple days and it
 was superb.  Accidents can produce greatness..  At Times ..   :-)
