As the gallstones were sent to China by the local businessman before
being ground up and packed in tiny bags for resale by traditional
medicine sellers, and everyone got their cut out of them, I would
guess that the price would have at least tripled!  Some gallstones
that were of particular shapes, like dumb-bells, hearts or teardrops,
brought premium prices.

At the abattoirs it was necessary to keep a constant watch on the
staff, as if they had the opportunity they would often feel the gall
bladders, and if something was inside, a quick slash with the knife
would give them a bit of extra pocket money.  Normally cutting gall
bladders was the prerogative of the manager, a half Maori Kiwi former
typist, who had worked in a NZ abattoir before coming to Vanuatu.  She
was quite compassionate towards the animals, and made sure they always
had a happy, pleasant time, and a good feed before going to the
"knocking room", where they were stunned before being strung up by the
hind legs and having their heads cut off, so the heart kept beating,
removing all the blood from the body.  Happy, relaxed animals also
taste better and are tenderer than the ones that are all stressed and
filled with adrenalin.  Did you really want to know that?

      Title: Ong's Nyonya Fried Rice
 Categories: Rice, Main, Malaysian, Hawaiian
      Yield: 8 Servings
 
      5 tb Salad oil
      3    Eggs, beaten
      1 sm Onion, thinly sliced
    1/2 c  Chopped dried shrimp
      4 c  Cooked rice
      1 c  Frozen mixed vegetables,
           Thawed
      4 oz Sliced mushrooms, drained
           Salt to taste
           Hot pepper-soy sauce to
           Taste
           Chili powder to taste
           Shredded lettuce
 
  In a large skillet, heat 2 Tb of the oil. Add eggs and fry in an even
  layer until firm. Remove and cut into strips. Add onion to skillet
  and cook until golden brown; remove and set aside. Heat remaining 3
  Tb oil and fry shrimp for one minute. Add rice, vegetables,
  mushrooms, half of the egg strips, the onion, and seasonings; stir
  fry for 3 min. Add a little water if rice is too dry. Serve on a bed
  of shredded lettuce and top with remaining egg strips.
