Yes sir ... real mean hot sauce ... anything you say, sir ...

The Sac and I (also Lynnie) were at a wing place not so long
ago, and they had a real hot sauce - a very ordinary bland
hot sauce with a floater of capsaicin. Tasted like crap. The
hotcho people have a lot to answer for, same as the chest-pounding
wusses - so you don't ever know whether hot means "wimpy" or
"excruciating," but it certainly doesn't mean "the way I like it."

MMMMM----- Recipe via Meal-Master (tm) v8.05

      Title: HABANERO HOT SAUCE
 Categories: Sauces
      Yield: 1 Recipe

     10    ***  fresh habanero chiles
           - finely chopped
    3/4    Cup  white vinegar
    1/2    Cup  grated carrots
    1/3    Cup  finely chopped onion
      1    Cl.  garlic, minced
    1/2    Tsp. salt

  In a small sauce pan over low heat, cook the carrots, onions and
  garlic until soft. Be sure to stir frequently to avoid burning. Next,
  add the vinegar, habaneros and salt. Simmer another 10 to 15 minutes;
  remove from heat and puree the mixture in a blender. (A Braun hand
  blender works great, too.)

  Return the pureed mixture to the pan and heat until boiling, then
  remove from heat. Use a funnel to pour the sauce into sterilized
  bottles. (Old hot sauce bottles work great, especially the
  wider-mouthed ones.)

  Finally, let everyone back in the house. Then ask them to try your
  fiery concoction -- that is, if they dare.

  Comment:

  Although it may seem like a lot of work to make a few bottles of your
  own hot sauce, it's also a lot of fun. Just be careful with the
  habaneros -- they'll burn you for days if they get underneath your
  fingernails. (Rubber gloves help.) And don't breathe too deeply over
  the stove, either. The combination of hot vinegar and habaneros is
  darn near lethal. In fact, you may want to ask everyone else to leave
  the house while you make the stuff.
