When travelling from Adelaide to Europe, Singapore makes a nice
stop-over break between the 7 hour and 13 hour flights.  I went on that
free bus tour of the city once, with stops along the way.  The tour
leader counted heads after each stop to make sure that none of the
passengers escaped, but after the Chinese temple stop, when she
counted, she came up with a total of one extra, which flummoxed her no
end!   After a long delay it was found that a passenger who had got
lost from another, earlier, tour bus had quietly joined our throng.

      Title: Hee Hing Spicy Chicken Feet
 Categories: Maindish
      Yield: 4 Servings
 
      1 lb Chicken feet
      4 oz Karo light corn syrup
      4 c  Vegetable oil
      1    Round onion, chopped
      1 sm Piece ginger, sliced
           Chinese parsley roots
      4    Whole star anise
 
  Marinade
  
  2 Tablespoons Oyster Sauce 1 1/2 teaspoons cooking wine or sherry
    1 1/2    teaspoons sugar
      1/2    teaspoon salt Dash sesame oil Dash white pepper 1 1/2
  tablespoons fermented black beans 1 tablespoon chopped green onion
    1 1/2    teaspoons chopped garlic 2 hot red chile peppers, thinly
  sliced
  
  Wash chicken feet thoroughly, remove any membrane and chop off
  toenails.
  
  Chop each foot into 3 pieces - the leg and two halves of foot.
  
  To blanch chicken feet, bring 4 cups of water to a boil, add corn
  syrup and remove from heat.  Soak chicken feet in hot syrup mixture
  10 minutes, remove, drain, and let stand 10 minutes.
  
  Heat oil and fry chicken feet three minutes or until golden brown.
  
  Bring 4 cups fresh water to a boil. Add chicken feet, onion, ginger,
  parsley roots, and star anise; boil 30 minutes. Remove chicken feet
  and drain.  To marinate chicken feet, combine oyster sauce, wine,
  sugar, salt, sesame oil, and white pepper. Add chicken feet and mix
  thoroughly. Add remianing marinade ingredients and marinate 4 hours
  or overnight in refrigerator.
  
  Place chicken feet in heatproof dish and steam 12 minutes.
  
  Makes 5 servings
