I can see that working; cukes are the eastern european answer to the crunch

How'd that happen?!  They'd work nicely as ersatz pie dough.  My sister did
a sort of apple pie this year. It was more or less apple crisp in a pie
pan, but qualified as a pie because she added egg.  It had raisins and
walnuts in it.  Worked for us.  I did a traditional pumpkin out of fresh
pumpkin. I overestimated the amount of pumpkin to use and it came out not
quite sweet enough for me, but I can serve the leftovers with molasses.
