Well, it implied that the FAs were in danger of more
serious injury than drink carts would cause. Probably
the cockpit decided that the chance of up-and-down
turbulence was greater than the side-to-side motion
or porpoising that would destabilize the carts.

I believe that the issue was "death or dismemberment."
The announcement was delivered with a certain amount
of urgency.

There really wasn't the opportunity.

You'll likely get zero versus dozens.

But they grind away in a prescribed and fairly predictable manner!

There is that. Luckily the airlines are thinking "let's not get
sued, let's use our limited resources on aircraft maintenance."

servings: 8

1/2 c olive oil
8 Tb butter
1 sm onion, chopped
1 sm stalk celery, chopped
1 md carrot, chopped
1 sm stalk fennel, chopped
1/2 bell pepper, chopped
1 sm leek, chopped
28 oz can crushed tomatoes
1 Tb tomato puree
1 Tb kosher salt
1/4 ts freshly ground pepper
1 Tb minced fresh oregano
1 Tb minced fresh basil
1 ts minced fresh thyme
4 whole bay leaves
1 ds cayenne pepper
2 ts minced fresh garlic
1/2 c flour
1/2 lb halibut, cut into one-inch pieces
1/2 lb swordfish, cut into one-inch pieces
8 lg sea scallops
8 lg shrimp, peeled and deveined
1/4 lb bay shrimp (or other sm shrimp)
6 oz picked crab meat
1 c dry white wine
8 cherrystone clams, scrubbed and steamed until opened
Minced parsley for garnish
8 sl French bread, spread with additional butter
- seasoned with additional garlic and oregano, and
- toasted until golden brown (optional)

Place half of the butter and oil in a heavy saucepan over md
heat. Add onions and cook gently 1 min; do not brown. Add
celery, carrot, fennel, bell pepper and leek and continue to cook
gently 5 min, stirring. Add tomatoes, tomato paste, 2 c
water, salt, pepper and remaining herbs and spices. Simmer, partly
covered, 2 hr, stirring occasionally.

In a large skillet over high heat, saute garlic in remaining
butter and oil for several seconds; do not brown. Lightly dust
all seafood but clams with flour and add to skillet. Saute 2 min,
until golden; then stir in white wine. Cook 1 min, allowing wine
to reduce.

Add sauce, cover skillet and cook over low heat 7 min. Transfer
to a big shallow casserole. Place steamed clams on top and garnish
with minced parsley. Serve hot with toasted French bread.
