There is brilliance there, but it's wrapped up inextricably
with idiocy in the way that cancer and normal functioning
organs often get intertwined. The way I figure it, though,
what has to get done in this world will get done, and why
mourn a dose more or less of genius? For every Beethoven
or Einstein there were probably ten stuck shoveling hay
and schmutz down on the farm someplace.

At this point g-kids would put me right into cardiac arrest.
Rosemary (not a romantic interest, just sort of almost)
informed me the other day that she's a great-granny as well.
Figures, as the g-kids I've met are in their 20s.

HERB POTATO MAXIMES
cat: snack
makes: 18-20 chips

1/2 c unsalted butter
2 lg Idaho potatoes
20 chive points, 1 1/2" long
20 fresh tarragon leaves
20 sm chervil sprigs
coarse salt

Melt butter. Skim to clarify. Let stand for 10 min.
Decant liquid from solids. M's note: this gets rid
of whatever lactose was in the butter and makes the
butter taste better besides. Further, it increases
the heat tolerance of the stuff.

Heat the oven to 300 F. Brush a heavy nonstick baking
sheet with the clarified butter. Set aside.

Peel potatoes. Rinse them under cold running water and
pat dry. Using a mandoline, slice one potato lengthwise
into paper-thin slices, discarding the end pieces. You
should get 18-20 even slices.

Lay the potato slices out next to one another but not
touching on the prepared baking sheet. Place one piece
each of chive, tarragon, and chervil in a pattern in the
center of each potato slice, leaving a small border.

Slice the second potato. Dry the slices, and lay them
evenly on top of the herb-topped slices. Once all the
potatoes are covered, firmly press each "sandwich"
together to seal the edges. Brush with the remaining
butter, and season to taste.

Bake at 300 F, turning the baking sheet from time to time,
for 25 min or until golden. Remove from oven, and drain
on paper towels. Serve at room temperature.
