Kosher Certification Agencies are almost as unified as the Democratic
(political) Party in the United States. There are many wings and factions all
claiming to the the "heartbeat of Judaism" as it were. Here is a brief overview
of the *MAJOR* groups providing Kosher Certification in the US.

Listed in order of numbers of certifications ...

Orthodox Union (OU) - The OU (New York, NY 10004 - www.oukosher.org) has been
certifying kosher products for over 80 years.

Chicago Rabbinical Council (cRc) - cRc (Chicago, IL. 60645 - www.crcweb.org) is
the largest regional, not-for-profit, Orthodox organization in North America.
Since its humble beginnings in the 1930's ...

Kof-K Kosher Supervision (Kof-K) - Serving the kosher consumer for almost 40
years, KOF-K (Teaneck, NJ 07666 - www.kof-k.org) was the first agency to
introduce computer technology to the complexities of kosher supervision.

Triangle K (K in a triangle symbol) - Triangle-K (New York, New York 10024 USA
- www.trianglek.org) certification is awarded by a consortium of Orthodox
Jewish rabbis who desire to see as wide a range of food products as possible
made available to kosher consumers worldwide.

Star-K (K in a 5 pointed star) - Star-K, (Baltimore, MD - www.star-k.org) the
symbol of the Baltimore-based Star-K Kosher Certification Agency, provides
kosher supervision globally. The newest Star-K office opened in Mumbai, India.
Of the several hundred kosher agencies in the world, Star-K is the only one
that certifies technology.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Kosher Creole Seafood Gumbo
 Categories: Stews, Seafood, Chilies, Rice
      Yield: 8 Servings
 
      1 lg Onion; chopped
    1/2    Green bell pepper; chopped
      1 cl Garlic; chopped
      2 tb Oil
      2 tb Flour
     15 oz Can stewed tomatoes
      6 oz Can tomato paste
      2 ts Salt
      1    Turkish bay leaf
    1/2 ts Mexene chilli powder
    1/2 ts Basil leaves; crumbled
      1 lb Trout filets
     10 oz Box frozen, sliced okra
    1/2 lb Redfish fillets
      3 c  Water
      1 tb Worcestershire sauce
      3 c  Hot cooked rice

  Saute vegs. slightly in oil in dutch oven. Stir in
  flour; blend well. Add remaining ingreds. except fish,
  okra and rice.

  Simmer covered for 30 min. Remove bay leaf. Add fish
  and okra. Cover and simmer additional for an 10 min.,
  or until okra is tender.

  Serve in soup bowls or plates over hot rice.
  
  Recipe may be easily doubled. Freezes well. Better
  next day.
