This is good, but it's no fun laying there wondering either, Hang in there

You know in some ways it is odd, I have been in a similar situation. When My 
diabetes got real bad, I got ketoacidosis. Now my A1C was almost 13 at that 
time. They decided to put me on insulin. I was so sick, they put me in the 
hospital, as I got a call from the dr to go to emergency and be admitted, 
insulin or not. I was so sick, I could not argue. But I was amazed at what 
they fed me there. I was on an insulin drip, Only supposed to be there 3 days 
to get regulated. But another story was that the Nurse accidently cranked up 
my insulin IV to be giving me 10 times the amount of insulin I was supposed 
to get. it was like if I were to get 100 units, she put on an extra 0 and I 
got 1000. Darn near killed me, They actually came in that night and pumped 
these 4 big things that looked like big caulk tubes of glucose into me via an 
IV just so I would not go into a coma. It pronlonged my stay there to two 
weeks. But I could not believe how they fed a diabetic. As You say, Juice, 
toast cereal, etc. My Blood sugars were still over 300-400 even when I left. 
I told my Dr. I can't eat like that when I get home, look what they are 
giving me and see how high the BS's are. He said, we'll just have to adjust 
the insulin, because You have to eat that way. I never could see how, and 
I can't. But at the time I was actually overwhelmed by the amount of carbs 
they wanted to stuff me with, as a diabetic. 8-)

Pan Fried Fish


Ingredients

    * 1 large or two small skin-on fish fillets, about 8 ounces (rainbow 
        trout, small salmon, brown trout)
    * Kosher salt
    * Ground black pepper
    * Flour for dredging
    * 2 tablespoon Canola oil
    * 3 tablespoons butter
    * 1 tablespoons capers, drained
    * 1 lemon, juiced

Directions

Heat a heavy pan over medium high heat.

Season fish on meat side with salt and pepper. Lightly dredge fish in flour 
and shake off excess. When pan is good and hot, add Canola oil followed 
immediately by 1 tablespoon butter. As soon as foaming subsides, place fish 
in pan with the skin side down. Jiggle pan for the first 10 seconds to keep 
the fish from sticking. Cook until golden crust forms on meat. Carefully turn 
fish away from you and again jiggle pan for the first few seconds. Cook until 
skin turns golden brown. Remove to a warm plate.

Pour out the cooking fat, add remaining butter and quickly fry the capers. 
Remove pan from the heat, add lemon juice to pan and swirl. Pour sauce over 
the fish and serve.
