I make my own pepper flakes in the food processor using ripe (red) Anaheim or
New Mexican chilies. They are fairly mild - but, with enough bite to let you
know they are there. They work nicely in gravies, added to sausage that is too
mild, spaghetti sauce that is too sweet, etc.

Cayenne is mostly a garnish with a bit of bite. I sometimes use it when I need
some heat but already have enough layers of flavour.

Try the chile flakes. Really. I used to save the little packets supplied by
several of the Pizza carry-out or delivery places around here - until I decided
that I wanted to use more of that sort of chile than I wanted more pizza.
That's when I began making my own. 

MMMMM----- Recipe via Meal-Master (tm) v8.06
  
       Title: Chile Colorado
  Categories: Sauces, Condiments, Chilies
       Yield: 3 1/2 cups

      20    Dried red chile pods;
            - stemmed, seeded
     1/4 ts Cilantro seeds
     1/2 ts Cumin seeds
       1 tb Dried oregano
       4 cl Garlic; pressed
     1/4 c  Onion; coarse chopped
       1 ts Salt (to taste)
       3 c  Warm water

  Coarsely grind the cilantro and cumin seeds in a spice
  grinder, and then put into the bowl of the food processor.
  Break the chile pods into small pieces, and coarsely grind
  in the spice grinder, and then add to food processor bowl.
  Add the garlic and onion to the food processor, and process
  until the onions are chopped.
  
  Add the remaining ingredients and process until pureed.
  Place the mixture in a 2-quart casserole dish. Cover and
  microwave on 70% (medium high) for twenty minutes, stirring
  after 10 minutes. (I assume you could make it on top of the
  stove, too.)
  
  Makes 3-1/2 cups.
