 GJ> And moose face!
 JW> Yep, that too.
GJ> In your family situation everyone would find that acceptable.
 JW> Not everyone.

Oh!

GJ> Unfortunately I have some fuss-pots around here who are suspicious
 JW> Same here.

Who? What can you do about it? Let 'em starve?

JW> I also have a moose spine cut into sections small enough to fit my
GJ> So you are sure you don't have any Mad Moose Disease?

JW> Pretty sure. The odds are such that I won't worry about it. I'm
JW> more likely to die from a moose attack directly.

A mad moose attack, of course.

GJ> a bit of fuss by local cattlemen here recently on hearing the
GJ> government would allow beef to be imported into Australia from Mad Cow
 GJ> infected American countries.

JW> Local cattlemen everywhere make a fuss over any easing of imports
JW> for any reason. Canada's track record is pretty good and improving.
JW> We test over 30,000 animals a year concentrating on older animals,
JW> sick animals and deadstock destined for rendering factories, not the
JW> food chain. Last year we found just one, an 8 year old rendering
JW> cow. So far not a single case of human cCJD.

One mad cow! Panic, panic! No imports from there! Yes, of course
local producers of everything will object to imports.

GJ> That appears to be a high rate of house turnover, considering the size
JW> Yeah, it's a transient city. The average home turns over once every
 JW> five years.

That is certainly fast.

GJ> Global warming should be good for your country, allowing it to enjoy a
GJ> more human-friendly climate. You may be able to export your wine to
GJ> the tropical jungle or desert country south of your border.

JW> If only. By the time we have a warm enough climate to grow grapes,
JW> the wine country in California will indeed be plagued by drought.
JW> But we don't have any damned soil to grow vines in. The glaciers
JW> stole it all during the last ice age and dumped it on Missouri and
 JW> Kansas.

Obviously they were Imperialist Yankee glaciers, stealing your soil.
Lately we have been having unseasonable rains in the Centre, with
flood warnings on rivers which have been dry for many years. The
Strzeleki Creek has had no water for 30 years, and now has 8 metres.
One man achieved fame by drowning in the normally dry Todd River at
Alice Springs.

MMMMM----- Recipe via Meal-Master (tm) v8.05

      Title: Jellied Moose Nose
 Categories: Meats, Game, Canadian
      Yield: 1 Servings

1 Upper jawbone of a moose
      1 Onion; sliced
      1 Garlic clove
      1 tb Mixed pickling spice
      1 ts Salt
    1/2 ts Pepper
    1/4 c Vinegar

  1. Cut the upper jaw bone of the moose just below the eyes.

  2. Place in a large kettle of scalding water and boil for 45 minutes.

  3. Remove and chill in cold water.

  4. Pull out all the hairs - these will have been loosened by the
boiling and should come out easily ( like plucking a duck).

  5. Wash thoroughly until no hairs remain.

  6. Place the nose in a kettle and cover with fresh water.

  7. Add onion, garlic, spices and vinegar

  8. Bring to a boil, then reduce heat and simmer until the meat is
tender. Let cool overnight in the liquid.

  9. When cool, take the meat out of the broth, and remove and discard
the bones and the cartilage. You will have two kinds of meat, white
meat from the bulb of the nose, and thin strips of dark meat from
  along the bones and jowls.

  10. Slice the meat thinly and alternate layers of white and dark meat
  in a loaf pan.

  11. Reheat the broth to boiling, then pour the broth over the meat in
  the loaf pan.

  12. Let cool until jelly has set. Slice and serve cold. "Northern
Cookbook" from the Ministry of Indian Affairs, Ottawa, Canada,
