From what I remember the last time I travelled in a second class
sleeper, there was a sink, but no toilet.  Showers and toilets were
provided at the ends of the carriages.

True.  It is not surprising that your passenger carriages are similar
to ours, as our 40 year old ones were made in USA - by Budd, I think.

I would expect some sort of food service for a journey of that length.
More or less comparable with the Adelaide to Melbourne trip.  That used
to have a night train with sleepers, and a day train, but now the night
train has stopped.  Pity.

Something for me to consider for the future.  The Canadan long distance
trains look very attractive on the Web.

Having travelled on long distance trains in Australia, NZ, Japan,
Western and Eastern Europe, Philippines, Malaysia, Thailand, Indonesia,
and Mexico, it would be good to compare what other N American countries
have to offer.

India is another place where I would like to try the trains.

      Title: Indian Railway Tea
 Categories: Beverages
      Yield: 1 Quart
 
      2 c  Water
      3    To 4 whole cloves
      1    Stick cinnamon
      3    To 4 cardamom pods (cracked
           -open)
    1/4 c  Loose black tea      -=OR=-
      4    Tea bags
      2 c  Milk
      4 tb Sugar (or a little less)
 
  Bring water, cloves, cinnamon and cardamom to a boil; let stand as
  long as possible. Then add tea and let steep.
  
  Add milk to the tea-spice mixture and heat but do not boil. When hot,
  strain and add sugar. Stir and keep hot.
