Well mozzarella is a very very mild cheese as you know, and melts into stretchy
cheese.. I always felt  Parmesan was a good substitute though :)  Some recipes
use them both together and those are great.  Chicken Parmesan does..

Some people like it cold, and some people like it hot in a sandwich.  The sub
shops always made them hot (you'd want the mozzarella on the top to melt so it
makes sense (g)).

How many eggplants do you use.. I think I usually use two medium sized ones.
But for just two people and not a ton of leftovers one would probably be just
right :)

I've never had enough left to freeze.. :)  but I know what you mean. Try the
sub sandwiches next time, you may really like them :)

Yeah but I guess not this time.  More bad news btw... well good and bad (grin)
The engine is blown on the car, that's why it wasn't 'fixed' at the local
place.. absolutely insane that shop could send the car back as if it was "ok".
So we're making arrangements now to get a new car.  What a week :)

I can understand that.  I remember thinking years ago, if I just had one more
cupboard (vbg).. so I'd make a makeshift one with spare lumber, or a bookcase,
that kind of thing.. :)
