Ärende: Handy recipe!

 Hi, Dale,

 Wow, was your inclusion of the recipe in a recent
 message well-timed! I just ran out to Wegmans
 after the last snowstorm to get, among other
 things, a packet of corn tortillas. But when I got
 them home, I found they had been bent in the
 shopping bag, and were broken into halves. Rats!
 That made them unusable for what I wanted to do
 with them. But they will work fine in a casserole
 like this and I can then go out and get a new package.

 DS> 2 c  Shredded cheddar, divided
 DS> 1 c  Cottage cheese
 DS> 1    Egg, beaten
 DS> 1 pk (10oz-6") corn tortillas,

 Serendipity strikes again!

MMMMM----- Recipe via Meal-Master (tm) v8.05

      Title: Easy "Quesadillas" with Fresh Salsa
 Categories: Vegetables, Cheese, Tortillas
      Yield: 2 Servings

      1 lg Tomato
      1 sm Onion
      1 ds Chili powder, to taste
      1 ds Hot sauce, to taste
      4    Corn tortillas (from dairy
           -case)
      1 md Sweet green pepper
    1/2 c  Shredded GOOD cheddar cheese
           -(the amount is actually
           -"to your own judgement"!)

    Chop the tomato and the onion very finely into a small bowl, add
  some chili powder and a shake or two of your favorite hot sauce. Mix
  well and set aside while preparing the quesadillas.
    Arrange the 4 tortillas on a baking sheet, not overlapping. Chop the
  green pepper quite finely, sprinkle over the tortillas (You actually
  could stretch this over 6 tortillas for 3 each for 2 people or 2 each
  if a friend drops in, but the baking sheet gets pretty crowded!).
  Divide the cheese between the tortillas, covering fairly evenly but
  not too close to the edge! Bake these a short time in a 400-degree
  (F) oven until the cheese is melted and a little bubbly and the
  tortillas are starting to crisp on the edges. Remove from oven and
  quickly fold each tortilla in half. Distribute the fresh tomato salsa
  among the quesadillas and enjoy, eating out of the hand, with a lot
  of napkins and over a plate, these are pretty messy.

  I don't know where I saw this, I just sort of memorized it and lost
  the original source. I realize these don't look like the quesadillas
  I've seen in restaurants or seen recipes for here, but that's what
  they were called in the recipe I read. Basically a cheese taco, I
  guess.
