If you tone down the heat of chilies, then you can add more of them
to a dish so that the chile's other flavours come on more strongly.

Capsaicin is a fatty benzene ring chemical with a long hydrocarbon
"tail" attached will make it water insoluble but oil and alcohol
soluble. And casein is a lipophilic (fat-loving) substance that
dissolves fats, so drinking milk picks up and washes away the
capsaicin.

When Neekha OD'd on her first habanero (she was two and picked one
off my plant), Roslind's antidote was whipping cream so she got a
good dose of casein and butterfat.

     Title: Sweet Sour And Spicy Fried Eggs
Categories: Eggs, Chilies, Indonesian
  Servings: 1

      3    eggs
      2    shallots
      3    red chilies
           juice of 1/2 lime
      4 TB cooking oil for frying
    1/2 ts sugar
    1/2 ts soy sauce
      2 TB water

In a non stick pan, Fry the eggs, sunny side up or any other style
preferred. Set aside.

Heat oil in the pan for three minutes over medium heat, add in chili
slices, shallots and soy sauce stir fry till fragrant for 5 minutes.
Add in the sugar and lime. Mix well.

Lower the heat and throw in the fried eggs. Serve with noodles or
plain steamed rice.

I am a big fan of eggs. Any type of eggs. Scrambled, sunny side up,
hard boiled, soft boiled, with rice, noodles. Easy meal with simple
eggs on toasts or plain noodles or rice can fill me up for hours.

Spice up the plain old fried eggs is easy and quite a delight. One
of my all time favorite is this simple sweet, sour and spicy
treatment... sweetness from the shallots, sour from the lime juice
and the hot after taste from the red chili.

Shallots, chili and sugar are like the trio of Indonesian cooking.
All three are always present in people's kitchen. Unlike the
extravagant Chinese cuisine's sweet and sour sauce, I really like
this version better. The taste is all there, without the goey sauce
thickener. Extra easy and extra yummy. Not using up too many pots
and pans, That's what I called easy cooking, if we can even call
frying eggs and dressing it up a little bit cooking.
