Funny how anomalies like that happen and then disappear
as though they'd never existed. When I had the house in
Salem, Mass., there was this kid named Donny who had a
thing for southern fried chicken, and so he opened a store
that served only that, and it did great for a while (and
offered some of the best chicken I ever had), but I guess
the good citizens of Salem weren't quite so enthusiastic
about fried chicken as he and I were, because after a few
years, he folded, and it's as though the oceans swallowed
him up - no record anywhere, and as this was before the
electronic era, gone forever.

There is nothing more satisfying than a bowl of Texas chili.
None of the extraneous silliness of beans and vegetables, and
the spicing is straightforward and wholly agreeable, without
the complicating aromas of cardamom and coriander and fenugreek
and cinnamon, such as you get in Indian food.

Soft tacos can start off real meals. Hard tacos (which I
also prefer) are a recent phenomenon and certainly more a
whimsy than real food.

Queso fundido
cat: celebrity, starter
yield: 1 batch

1 c white wine
1/2 lb mozzarella cheese, grated
1/2 lb Monterey Jack, grated
1/2 lb goat cheese crumbled
2 poblano peppers
- roasted, peeled, seeded and finely chopped
1/4 lb Spanish chorizo, grilled and finely diced
6 cloves roasted garlic, smashed to a paste
Salt and freshly ground pepper

Bring the wine to a simmer in a double boiler. Add the
mozzarella and Jack cheese and stir until melted.
Add the remaining ingredients and cook for 5 min. Place
in a fondue pot and serve with flour tortillas and blue
corn chips.
