================
Hi Janis,

JK> > Take it easy; I've broken ribs from coughing hard.

JK> My cousin told me she did the same thing :) I'd never heard of any
JK> one doing that before she mentioned it (g)

Weak bones, bronchitis, hard cough all add up to no fun. As I told
Mark, I did it more than once.

>> Know what you mean, believe me.. that first house was great.. when we
>> bought it that was the thing that impressed us both so much about it..
>> the opportunity existed all over it for changing things.. given the

JK> > Probably hurt to let that one go. This one is about twice the
JK> square > footage we had in HI but the rooms, especially downstairs,

JK> Yes, the layout of the rooms was great in that house.. as was the size
JK> of the rooms.. here, it's mostly ok.. but not perfect.. but.. oh well

It's all how you look at it. We know we've not got a great kitchen here
but we can use it. It gives us somethng more to dream about for the
future. OTOH, our master bedroom is nice and roomy, with a full bath
off of it.

>> take extensive work to really get it the way I want it.. so we'll kind
>> of make the changes I want :)

JK> > Is it the one you will be in forever? If so, then do all the changes
JK> you > want. My folks were debating a picture window or a fire place

JK> I dunno.. we talk about selling and moving to Scranton where my family
JK> is.. then we think geez, more cold weather... and who wants to pack up
JK> ALL THIS STUFF anyway?? Lol... I really don't know what we'll do in
JK> the long run.. probably nothing unless there's some big reason to
 JK> change something here :)

Well, it's your call. We know we won't be in this place forever.

>> Yep.. This little experiment worked out well except for how wiped out
>> I was after I was done :) I decided then that there wasn't enough I

JK> > I know the feeling; I've had major sewing projects like that.

JK> Yep, You vow that should it come up again, you will intentionally
JK> suggest a price to people you know will be so far out of whack that
JK> they'll doubtless say 'forget it' and you're happy they did haha :)

I've not hit that point yet. One project I did about 10 years ago was
costumes for our church Easter cantata; I did about 15 of the 45. I had
the people pay me whatever they thought it was worth. All fairly paid
but some knew the time and money involved and paid me extra.

>> That's one of our favorites here.. :) Do you dip the eggplant slices
>> in egg, Here's how I do ours, is yours done similar?

JK> > Sort of similar; you probably saw my write up on it. I don't have a
JK> > specific recipe--and surprisingly, my major cook books don't either.
JK> > I've done my own version of it (really close to yours) several times
JK> > over the years; this was the most successful.

 JK> Sounds good :)

>> ===EggPlant Parmiagana===
>> 1 quart or more Marinara sauce,
>> 1 pound mozzarella cheese, sliced
>> Fried Eggplant slices (see recipe below)

JK> > I was a bit short in the sauce department--had put a quart on the
JK> stove > to heat and a bit more than I anticipated evaporated. But, it
 JK> was a nice > thick sauce.

JK> Great :) That makes it so good. Eggplant parmigian is my favorite
 JK> sub sandwich as well :) :)

I've never had it as a sub sandwich before but don't see where it
wouldn't make a good one. I don't think I've ever seen it on a menu
board but probably would, if I were in a "little Italy or Sicily"
neighborhood.

>> Fried Eggplant
>> 1 large eggplant
>> 2 cups Italian-flavored bread crumbs 3 eggs, beaten

JK> > I didn't season my bread crumbs (they're home made, whole wheat) and
JK> > needed 4 eggs. I also gave the slices an initial coating of flour.

JK> I usually put a bunch of grated romano cheese and parsley in the eggs
 JK> as well :)

JK> > Neither of my two Italian cook books, nor even Joy of Cooking had a
JK> > recipe so I guess I did pretty good on my own guess-timation. It's
JK> > probably the best one I've ever made.

 JK> :)

And it will be repeated some day. Just have to decide when the right
time is. (G)
