True, but the size of this one is still plenty for at least 2 meals for us and
 the leftover fat will go in many things.

Ian Hoare (fellow in France, you'll see him eventually here) says that his
part of Europe even sells the rendered fat as a separate item in the grocery
stores there.  I'd love that but have never seen it here in the states.

As it is, I carefully hoarded every drip of the one and only duck I've ever
made, and it was wonderful in many things later.  Probably managed some 7-8
meals out of that rendered duck fat (mixed often with a little olive or
bacon fat to make it last longer).  The duck carcass also made a lovely 'duck
broth' which we used to enhance many other dishes over the following month.

I just checked, I think this one will fit the roasting pan without trimming,
but just barely.  You are right that it's hard to guess the weight.  It's as
long as a 6lb chicken but 'thinner'.  Then again, your roasting chickens may
be longer and thinner so that's not saying much!

Figure I got a young duckling at something close to 1/2 the price of yours,
though smaller (so younger, which maybe is a good point for duck?)

The roasting pan is a small one.  I've a larger 'V' shaped rack for pork
shoulders (no lid) that would take a far bigger one.  Don got me this pan
though for Mother's day.  Everyone here, especially me, was suprized whrn
that came out.  See, I'd gotten my first ever 'duck' and we all had quite a
thread going as I filtered recipes, selected one, and had all sorts of
shenannigans going on with how to raise it out of the grease for cooking
using my existing gear in Sasebo (big 'V' rack in storage stateside then).

I had finally devised a series of cleaned out cans that had top and bottom
removed, to prop the Duck on, when Don convinced me to 'wait a day, I'm not
yet in the mood for duck'.  Grin, one extra day of defrosting in the fridge
wouldnt hurt it so I waited as this was 'special' and he wanted to play
with the food too.

That Mother's day morning, There is was!  A proper roasting pan!  With lid!

Ours was nice enough.  JUst not a big thing for us.  I was in bed by 9pm, Don
by 10.  Charlotte about the same time as me.  In Sasebo Japan, we sometimes
stayed up for the fireworks they'd do over the ocean, but here?  Naw.  To far
from the big ones unless driving and I prefer to be off the roads that night.
