There are a few farmers in my area who have realised that Mr. Banker is not
their friend and have scaled back from mega-farming a single crop to the sort
of sustainable, crop rotation, common sense agriculture that was practiced when
I lived on the farm. A couple have gone "certified organic" but are so pissed
at what USDA is allowing as "organic" that they market their stuff as "natural"
in protest.

I went to gourmet.com to see if an article called "Betting The Farm" was
available on-line. Not yet. If you get a chance to read it in the current issue
it's very enlightening ... especially as it confirms what we are preaching. 

On line at gourmet.com there is a tab for a section called "Politics of the
Plate" written mostly by Barry Estabrook -- it, also, is an eye-opener.

What we really need is a USDA which has the interests of the famers at its
heart, not the intrests of the agri-businesses as exemplified by the Andreas
clan, Con Agra, et al. But, bureacraps are basically lazy and want a single,
one size fits all answer for all problems.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Gyro Sandwiches
 Categories: Greek, Breads, Beef, Lamb/mutton, Sandwiches
      Yield: 16 servings
 
      8 lg Pita breads; cut in half
           Thin sliced onion rings

MMMMM------------------------GYRO PATTIES-----------------------------
  1 1/4 lb Lean ground beef
  1 1/4 lb Lean ground lamb
    1/4 c  Oregano
  1 1/2 tb Onion powder
      1 tb Garlic powder
    3/4 tb Ground pepper (or more)
      1 ts Thyme
    3/4 ts Salt

MMMMM------------------------YOGURT SAUCE-----------------------------
      1 c  Plain yogurt
    1/4 c  Fine chopped cucumber
    1/4 c  Fine chopped onion
      2 ts Olive oil
           Garlic powder
           Salt & white pepper
 
  For patties:  Preheat broiler or prepare barbeque.  Combine
  ingredients lightly but thoroughly in large bowl.  Shape into 16 thin
  patties and broil, turning once, until done as desired.
  
  For sauce:  Combine first 4 ingredients in small bowl.  Add garlic
  powder, salt and pepper to taste.
  
  To assemble sandwich, place 1 meat patty in each pita half and top
  with yogurt sauce and onion slices.
