 DS> The Food section of this Wednesday's Washington Post had a long
 DS> article on slow roasting beef.  They were talking about very low
 DS> temperatures, 170F to 200F for several hours per pound.

There are various methods: the one I prefer is to preheat the
oven to 500-odd, throw the meat in, turn the oven off, and forget
it. Others recommend searing the meat on top of the stove and
then putting it in a 140-150 oven for an arbitrary length of
time, at least overnight - this was the Heston Blumenthal recipe
that Ian used when we were in France a year ago.

    I'm
 DS> debating trying that someday if I can find a cut of beef I think

The cheaper cuts do better slow roasted; the better cuts do
equally well both ways.

Fogo de Chao is considered classier, but I'm not sure it's
any better than Green Field.

As I recall, the dim sum place was across the walk from the
meat place. I don't know what was going on there, as one
pays as one goes; at the meat place you can understand, as
every extra bite you take is a coin out of the owner's pocket.

Zwiebelrostbraten (Onion Steak)
cat: dining alone, simple, main, beef
servings: 1

6 to 10 oz New York strip steak
1/2 md onion, sliced thinly
butter or oil
salt and pepper

Fry steak on both sides until desired doneness. Remove to
a plate and sprinkle with salt and pepper.

Put a small amount of butter or oil in fry pan and fry
onions until crisp. Remove and pile on steak.

Serves one.

One of Sam von Trapp's favorite meals is very simple to prepare. Be
sure you have a good quality steak.
