We had just such an Echo picnic about five years ago. The
fried turkey was very good.

Pointing out that green parts of potatoes have substantial
amounts of poisonous alkaloids including solanine. Sprouts,
eyes, discolored skin, and greens should not be eaten.

Cuban sandwich
cat: sandwich, Cuban
yield: 4

4 ciabatta or Portuguese rolls
2 Tb yellow mustard
1/2 lb roast pork, sliced thin
1/4 lb provolone or Swiss, sliced thin
1 md dill pickle, sliced thin
1/2 sm red onion, sliced thin
1 Tb butter, softened

Slice bread diagonally in half, leaving one edge
intact. Lay bread open and spread each side with
mustard. Arrange pork, cheese, pickles, and onion
on each roll. Bring the tops and bottoms together.
Heat a sandwich press or panini maker. Butter each
side of the press and insert the sandwiches. Press
and grill until cheese is melted and bread is flat,
about 10 min.
