Surprisingly, the McD's lobster rolls were said to be a good
deal for the price - twice what a fancy burger would cost but
half what you'd pay for a real lobster roll. And there was
supposed to be a decent amount of lobster in them, too.

I had a Big Mac in Dublin once: it was not dissimilar from
stateside ones, except that the sauce was extremely salty.

Indeed it was. I used to get a 3 piece meal for 3 bucks
or so, and it would tide me through a rehearsal and well
into the next day. And the chicken was, as you know,
actually pretty good.

Peppered Beef
cat: English, fancy
servings: 4

2 hd garlic, divided into about 16 cloves

150 ml (1/4 pint) Olive Oil
500 g (18 oz) sm floury potatoes, such as King Edward's
1 sm Savoy cabbage, weighing about 600g (20 oz), quartered and
- cored
750 g (26 oz) filet of beef, cut into 4 steaks
25 g (1 oz) black peppercorns, cracked
100 g (3 1/2 oz) unsalted butter
300 g (11 oz) oyster mushrooms
100 ml (4 fl) balsamic vinegar
4 sprigs fresh thyme to garnish

Preheat oven to 180C/350F/Gas Mark 4. Blanch the garlic in
boiling water for 2 min, drain, then peel. Season and place
in a small ovenproof dish. Cover with the oil and cook in the
centre of the oven for 35-40 min until crispy on the outside
and soft inside. Remove from the oil and put aside. Reserve
the oil. Increase the oven temperature to 230C/450F/Gas Mark 8.

While the garlic is roasting, prepare the vegetables. Place the
potatoes in a pan, cover with boiling water, return to the boil
and simmer for 12 min until almost cooked. Drain, refresh with
cold water, and set aside. Chop the cabbage leaves into large
sections and blanch in boiling water for 2 min. Refresh in iced
water, drain, and set aside.

Season the steaks with cracked peppercorns and salt. Heat half
the reserved oil and half the butter in a roasting tin. Add the
potatoes and cabbage and turn to coat. Roast at the top of the
oven for about 15 min until golden.

While the vegetables are cooking, put half the remaining oil
and half the remaining butter in a frying pan and brown the
meat over high heat for 30-60 sec on each side. Place the
steaks in an ovenproof dish and cook in the oven for 3-5 min
for rare steaks, 8 min for medium, or 10-12 min for well done.

While the meat is cooking, use the remaining butter and oil
to saute the mushrooms until golden. Keep warm.

When the steaks are cooked, lift them out and allow to rest
for a couple of minutes. Add the vinegar to the cooking juices
in the dish and stir gently over a low heat for 1 min. Season.

Place servings of cabbage, potatoes, mushrooms, and garlic on
each dinner plate. Top with a steak and spoon over balsamic
dressing. Garnish with thyme.
