 I wasn't raised on "greens" (except spinach) but
 wanted to try more of them in recent years because
 I figured they were probably good for me. Guided
 by this group, I worked out a prep good for me, of
 starting with a little bacon fat (and if I got
 that from frying up a slice of bacon, saving it
 to add to the greens) to fry up a small onion and
 a garlic clove, diced and thin sliced, respectively,
 until soft, then adding the washed and chiffonnaded
 leaves of the greens and covering to steam the mess
 together until the greens were tender. Salt to
 taste at the table, I guess. I do discard the
 ribs of the larger greens like collards, kale and
 chard, though a dedicated "stock" maker might
 save them to enrich a stock base nutritionally.

 Your instincts are accurate, in that greens and
 bacon like each other!
