Up north here, this is a fairly common "premium" brand, and I
must say, I endorse your endorsement, it's quite good, though a
bit licoricey for my taste. We have several root beers, Stewart's
for example, that I find palatable and hard to find in other
parts of the country. But then I'm a sucker for the stuff, even
if it has HFCS (Mug) or caffeine (Barq's).

Hey, don't I notice that Jones has gone back on its disastrous
reformulation and stopped paying homage to the black god HFCS?

Miso-broiled black cod
cat: celebrity, ecologically unsound, fusion, fish, main
servings: 1

h - miso marinade
1 c sugar
1/2 c mirin
1/2 c sake
2 c white miso
h - noodle vinaigrette
4 oranges, juice and zest of
1 c chili paste
1 c brown sugar
1/4 c rice vinegar
1 c mushroom soy
1/2 c peanut oil
h - sesame miso vinaigrette
2 egg yolks
2 Tb Dijon mustard
2 garlic cloves
1/4 c pickled ginger (gari)
1/2 c water
1/4 c red miso
1/4 c toasted white sesame seeds
3/4 c rice vinegar
1 Tb sugar
2 c peanut oil
2 Tb sesame oil
1 ts togarishi
h - fish
5 oz black cod
3 oz lo mein noodles, cooked
3 oz cilantro, julienne
3 oz carrots, julienne
3 oz cucumber, julienne
3 oz bean sprouts
3 oz pickled ginger (gari), julienne

For the marinade: flame off the sake in a saucepan. Add
mirin and bring to the boil. Whisk in miso and sugar.

For the noodle vinaigrette: whisk all together.

For the other vinaigrette: blend first 9 ingredients
smooth. Drip remaining ingredients into mixture with
the blade turning until an emulsion is formed.

Marinate cod 24 hr in marinade. Remove and cut into
quarters. Place fish on a foil-wrapped tin on carrots.
Broil until done, brushing with extra marinade and
turning periodically.

Add last 5 ingredients to the noodles. Toss with noodle
vinaigrette. Correct seasoning.

Spin noodles on pasta fork; cut into 4 pieces. Place on
plate. Put small pool of miso vinaigrette next to noodles.

Place 4 pieces of cooked fish on top of vinaigrette.
Garnish noodles with pea tendrils.
