There are some varieties of tomatoes that can do well in 75 days
with low heat provided that they get lots of sunlight. I can grow
some breeds here (starting with hot house bedding plants I set out
the first week of June, not from seed.)

     Title: Sara Mair's Savory Tomato Bread Pudding With Basil Cream
Categories: Side dish
  Servings: 8

    1/2 lg red onion, brunoise
      5    cloves garlic, sliced
      1 qt heavy whipping cream
    3/4 qt milk
  1 1/2 cn tomato paste (6oz cans)
     10    whole eggs
      3    loaves baguette, diced small
           with crust
      1 bn basil, chopped
    1/2 bn thyme, chopped
      8 oz cream cheese
      1    bottle balsamic vinegar

If you might like a savory bread pudding, perhaps you'd like one
from the recent past season of Top Chef.  The "cheftestants" had to
prepare party foods for some Miami Fashionistas on a yacht party,
but had tiny budgets.  One of the chefs, Sara Mair, came up with a
tomato bread pudding with basil cream.  I haven't tried it, I
haven't ever had a savory bread pudding, but it was really well
received by the "sophisticated and elite palates" (boo, hisssss).
I'll post it below as copied from BRAVO's site, with the usual
caveat that their recipes are almost never complete or accurate...

In a saute pan, saute onion and garlic until translucent. Mix in
whipping cream. Season to taste. In a blender, blend milk and tomato
paste. In a large bowl, add tomato mixture to onion-garlic cream.
Season to taste, then add eggs and diced baguette. Combine well and
let stand for 45 minutes. In another bowl, mix basil, thyme and
cream cheese. Push through a tamis. Preheat oven to 375 degrees.
Bake bread pudding in mini muffin for 15 minutes; top with basil
cream when ready to serve. Drizzle the plate with balsamic vinegar.
