Hi Sean!

(grin) true! But you can read a bit before jumping in, or at least one should..
I remember spending three days reading before I put the system up.. that
included switching from OS/2-Maximus to Linux/BBBS and getting a minimal
Linux/BBBS/li system running so I could transfer mail "safely". Of course I
had somewhat a bit of responsibility with USRobotics and the FileGate at that
point so I had to.. they were waiting in the wings for me to get the system
back up and running, tapping their fingers... I vaguely remember telling
everyone in the house that if they bothered me, I would kill them (haha). That
doesn't mean later I didn't make mistakes, of course I did
;) Like running too many services way back when installs included every
service and leaving every port open on the box (yes, the box got hacked by a
kiddie script).. oh those were the fun days (bg). But murphy is a sneaky guy..
he waits til you're away from home usually. You know the type of problem.. the
drive that never gave you a problem until it suddenly decides to act up? that
kind of thing ..

The people I connect with in other zones are up and running I'm happy to say.

Omelets are great food - we love them too... A good Frittata is also always a
good comfort food around here, especially in the summer when the garden is full
swing and greens are around.

Geez, now you're making me hungry!

I can understand why! that does sound incredibly good!

I should tell my Aunt about that place, I bet she would love it too.. She just
moved to Atlanta with my cousin Mark, who I told you is a policeman there in
Atlanta.. Now I have several good reasons to come down to Atlanta to visit. My
aunt Mimi (her full name is Dominica, I always loved her name) was always one
of my favorite Aunts. I used to call here Momma Mimi :)

Great, I can let her know about that and I can check it out as well :)

===Spinach Frittata===
Serves 4
Preheat the oven to 350°

3 tablespoons olive oil
1 small onion, diced
6 eggs
1/2 pound fresh spinach
salt, pepper

Warm 2 Tb. of the olive oil in a large oven proof frying pan. Rinse the
spinach, shake off excess water, and add it to the frying pan. Cover and steam
for 5 minutes. Remove the spinach and keep warm. Add about 1 Tablespoon oil to
the pan and warm on low. Add the onion and saute until translucent. Beat the
eggs until frothy and shake some salt and pepper on lightly. Add the seasoned
eggs to the onions in the pan. Add the steamed spinach and cook on low heat for
about 3-5 minutes until the eggs are set on the bottom. Place the pan in the
oven for about 5 minutes until the top is set.

Take care,
Janis
