      Title: Fresh Fruit Sundaes

MMMMM-------------------------MERINGUES------------------------------
      4 lg Egg whites
    3/4 c  + 2 tablespoons sugar
    3/4 c  + 2 tablespoons powdered
           - sugar

MMMMM---------------------------SUNDAE--------------------------------
      8    Strawberries
        ds Port (opt)
      1 c  Whole-milk plain yogurt;
           - sweetened
      1    Banana
      1 pt Vanilla ice cream
    1/2 c  Whipping cream; beaten to
           - soft peaks and sweetened
           - with sugar
      1    Basket blackberries or
           - cherries; pitted

  Gary Rulli of Emporio Rulli in Larkspur and San Francisco
  created this dish for Mother's Day.
  
  For the meringues: Preheat oven to 250 degrees. Line a baking
  sheet with parchment.
  
  Whip the egg whites, gradually increasing mixer speed until
  stiff peaks form. Add the sugar, a tablespoon at a time,
  beating until stiff glossy peaks form, scraping the bowl
  from time to time. Fold in the powdered sugar by hand.
  
  Transfer the meringue to a pastry bag fitted with a plain
  round tip and pipe 2-inch rounds onto the baking sheet.
  Alternatively, spoon out meringue into rounds.
  
  Bake for 1 to 1 1/2 hours; turn off oven after meringues
  take on a light caramel color. Let the meringues dry in the
  oven with the door shut for a few hours or overnight. When
  cool, chop with a knife into large chunks. Set aside.
  
  For the sundae: Layer in the following way: Dice 2 strawberries
  per serving into small cubes and drop them into the bottom of
  parfait glasses. Add a splash of optional port to each. Top
  with enough yogurt to cover the strawberries. Slice the banana
  and place on top of the yogurt. Add ice cream; sprinkle with
  meringues. Cover with half of the whipped cream. Add blackberries,
  then more whipped cream. Garnish with fruit of choice.
  
  Serves 4
