I've done that so often that my little pipi doesn't even
feel it any more.

As I understand it you can order them from the government, and
until recently, you could pay with credit cards, thereafter
paying your credit bill with those same coins; this might seem
like a lot of work for minimal gain, but if you got one of those
fancy mileage-earning cards, you could get up to a free ticket
a month, depending on your credit limit, the strength of your
back, and the patience of your bank.

On various fora (not this one) life would be a lot better for
all if I got to tell people that they were stupid. One of the
reasons entropy increases is that we let it do so. Sometimes
we encourage it. But in our own realms and in our lifetimes
we can reverse the trend or channel it at least.

Further to that, entropy is a physical issue; there's I believe
no rule that says that culture and intellect need always go
toward disorder. Religion and education are based on the notion
that some amelioration is possible.

Cabrito al pastor
cat: Mexican, bbq, main
servings: 20

10 lb cabrito (goat), cut into 8 oz pieces
1/4 c salt
1 c cider vinegar
salt and pepper
1 lg bag mesquite charcoal
2 pt guacamole
24 oz pico de gallo, mild, medium, or hot
30 flour tortillas

Combine cabrito, salt, and cider vinegar in a large
plastic container and cover with water. Set aside
for 2 hr to overnight. Remove cabrito from brine
solution, and set aside 2 c of brine solution.
Season cabrito to taste with salt and pepper.

Place 8 c mesquite charcoal on one side of a
charcoal grill and line the other side with
heavy-duty foil to form a drip pan. Light the
charcoal and burn 30 min until coals are ashen.

Place cabrito over indirect heat side of the grill,
close grill cover, and roast for 2 to 3 hr. Turn
cabrito every 20 min so that it cooks evenly. Baste
with the reserved brine solution and add 8 to 10
more pieces of mesquite charcoal to the fire every
20 min. Cook cabrito until internal temperature of
the thickest piece is 160F.

During the last 30 min of grilling, prepare
guacamole according to [favorite recipe] and chill.
Heat tortillas according to package directions and
keep warm.

To serve, cut cabrito in to smaller pieces. Serve
with guacamole, pico de gallo, and hot flour
tortillas.
