      Title: Chocolate, Almond & Banana Parfaits

      Yield: 4 servings
 
    1/2 c  Bittersweet chocolate chips
      6 tb Heavy whipping cream;
           - divided
    3/4 c  Mascarpone cheese
      3 tb Amaretto
      2 tb Sugar
      8 sl (1/2") angel food cake
     24 sl (1/3") banana; diagonal
    1/3 c  Sliced almonds; toasted
 
  This super-quick dessert can be served right away, or
  covered and chilled for up to four hours. (If you're making
  the parfaits ahead, let stand at room temperature one hour
  before serving.) Mascarpone (Italian cream cheese) is sold
  at many supermarkets and at Italian markets.
  
  Heat chocolate chips and 4 tablespoons cream in microwave in
  1-cup glass measuring cup at 50 percent power just until
  chocolate is melted, about 30 to 35 seconds. Stir to blend;
  cool chocolate sauce to lukewarm. Whisk mascarpone,
  amaretto, sugar, and remaining 2 tablespoons cream in medium
  bowl until blended and mixture just starts to thicken.
  
  Using 2 1/2-inch-diameter cookie cutter, cut out round from
  each angel food cake slice. Place 1 cake round in each of 4
  wine goblets or old-fashioned glasses. Top each cake round
  with 3 banana slices, 1 heaping tablespoon mascarpone
  mixture, bittersweet chocolate sauce, and sprinkling of
  almonds. Repeat parfait layering 1 more time and serve.

      Title: Banana Cupcakes With Peanut Butter Frosting

  1 1/4 c  All purpose flour
  1 1/2 ts Baking powder
    1/2 ts Baking soda
    1/4 ts Salt
      2    Very ripe large bananas;
           - peeled
    1/2 c  Sour cream
  1 1/2 ts Vanilla extract
    3/4 c  Sugar
    1/2 c  Unsalted butter; room temp
      1 lg Egg
      1 lg Egg yolk

  1 1/2 c  Powdered sugar
      8 oz Pkg cream cheese; room temp
    1/2 c  Unsalted butter; room temp
    1/2 c  Smooth peanut butter
           Chopped lightly salted
           - roasted peanuts (opt)
 
A classic combination in an adorable little package. The
cupcakes, which are reminiscent of banana bread, would be
a great breakfast treat (with or without the frosting).
  
  For cupcakes: Position rack in center of oven and preheat
  to 350øF/175øC. Line 12 standard (1/3-cup) muffin cups
  with paper liners. Whisk flour, baking powder, baking
  soda, and salt in medium bowl to blend. Mash bananas with
  fork in another medium bowl until smooth. Mix sour cream
  and vanilla into bananas.
  
  Using electric mixer, beat sugar and butter in large bowl
  until light and fluffy, about 3 minutes. Add egg and egg
  yolk and beat until well blended. Add flour mixture in 3
  additions alternately with banana-sour cream mixture in 2
  additions, beginning and ending with flour mixture and
  beating just until blended after each addition. Divide
  batter among prepared muffin cups (generous 1/4 cup for
  each).
  
  Bake cupcakes until tester inserted into center of each
  comes out clean, about 20 minutes. Transfer cupcakes to
  rack and let cool completely.
  
  For frosting: Sift powdered sugar into large bowl. Add
  cream cheese, butter, and peanut butter. Using electric
  mixer, beat mixture until smooth. Spread frosting over top
  of cupcakes, dividing equally. Sprinkle lightly with
  chopped peanuts, if desired.
   
  DO AHEAD: Can be made 1 day ahead. Store airtight at room
  temperature.
