Poutine is fries and gravy with fresh Cheddar cheese curds.
Revisionist fancy pants poutine may add a fourth ingredient ...
some kind of meat garnish. That's it.

There are lots of kinds of "dressed fries" but just one of them is
poutine. Chili cheese fries and nacho fries are dressed fries but
they are not poutine.

So-called Michigan sauce is the popular name in the east (especially
upstate New York and Quebec) for something very similar to what is
known as Coney sauce in Michigan (and the Canadian Maritimes). Both
started off as hotdog dressings and later became a French fry
topping.

But then you knew that: "UDD Note: This is only called Michigan
Sauce in upstate New York and some poutine stands in Quebec. In
Michigan it has more zip to it and is called "Coney Island Sauce".

I didn't attend that motel breakfast so I can't comment on their
Michigan sauce but a properly made one is quite tasty.

      Title: Michigan Sauce From Plattsburgh NY
 Categories: Sauces, Groundmeat, Beef, American, Chilies
      Yield: 1 batch
 
      1 lb Hamburger
      1 sm Can tomato paste
      1 lg Can tomato sauce
      4 tb Chili powder
      1 tb Mustard
      2 tb Vinegar
      1 tb Brown sugar
      1 md Onion, chopped
    1/2 c  Ketchup
           Salt and pepper
 
  Mix all ingredients, plus one can of water from tomato paste can.
  Bring to a boil and let simmer for one hour. Serve over hot dogs
  buried with chopped raw onion.
