OK, I've not seen that. Some rices I do rinse, but not pasta.

Usually given as a different one will affect the taste in a way not
intended by the recipe originator. A very fruity olive oil will have a
much different effect on the taste of something than a light canola oil.

Agreed, and various salts weigh differently for the same amount. Thus,
one teaspoon of kosher salt may weigh more or less than the same amount
of sea salt. The recipe was written with a specific taste in mind.

I don't buy the boxed; it's just as quick and easy to make my own.

Both Steve and I were brought up without mustard in mac & cheese. Nobody
we know does it unless they learned from me. As for milk/cream--I'll use
milk in the cheese sauce most of the time but have also used home made
chicken stock with good results.

Your choice. Same as my choice, we both can shop wherever we want, for
whatever we want.

Our older daughter worked for W-M for some years when she & her husband
lived in Charleston. Could have been that particular store but they
worked with her to accomodate her school schedule, to include student
teaching.

I'm not thrilled with so much made in China or other Asian countries but
as you say, hard to find some things not made off shore.
