Cataracts grow at different rates... mine grew fast after first being
noted, but many people wait years for the cataracts to grow to a point
where it would make sense to deal with them... and the eye doctor
generally knows where one is in the process....

The technology has come a long way... now with the made-to-spec lenses
they insert into the eye in place of the removed cataracty ones, sight
is much better immediately, and one hardly has to worry about anything
even immediately post-surgery...  It takes a little time for the eyes to
totally settle in (3-4 months post surgery now, mine are almost there),
but it's a matter of small improvements as the brain adjusts to the new
lenses over time...  People who have had significant corrections in
their eyeglasses are the happiest immediately post-surgery, since the
difference is even more noticeable..  :)

You had the skin from the duck you bought for its various purposes, and
the skin from the chicken we used for Dave's dish... But nobody bought a
rotisserie chicken for any other purpose for you to grab the skin... ;)

You used the combined renderings for the fat to cover your duck comfit,
as I recall...  :)

Yeah... even the white meat has its uses...  ;)

On another topic... Fu opened (without much fanfare) Friday... basically
just turned on the Open sign and posted hours...  ;)  We went there
tonight... no liquor license yet (he's applied for just beer and wine),
but that wasn't missed at all..  We sat at the sushi bar and watched him
back in action just as before, except now it's his own place... :)  We
arrived while he was in the midst of making up sushi platters for a
crowd (maybe 10?) who were all having the all-you-can eat special... We
gave him time to get most of it done before submitting our order...  :) 
We had the sashimi platter, and a couple of extra nigiri pieces... it
came with miso soup, salad, bowls of sushi rice... and a couple of
appetizer plates that Fu said were on the house, while we waited... All
very very good... as Richard said, it tastes like more.  ;)

I texted my son (who'd asked for that, to let him know when Fu opened),
that he had opened and that we were sitting at the bar... he responded
back, Dinner tomorrow at 18h?  So, he's driving down from the pond
tomorrow, and we're going back there tomorrow for seconds...  :)  I'm
looking forward to it...  (G)   We'd somehow managed to forget a little
just how really good he is... now we are doubly spoiled all over again.

There was a young couple that sat next to us at the bar, came in with
their baby... they'd had word that Fu had opened, and had to come out...
they were saying how they'd tried all sorts of other sushi places in
town, and their response kept being it's ok, but it's not like Fu's...

Judging from the people there tonight, I suspect that word of mouth will
be all the advertising he'll have to invest in... Hasn't done any formal
ads yet, and probably won't need to... it's a small enough place it'll
likely be pretty jammed regularly, once all his old regulars get the
word...  :)
