My friend, Jungle Jim, was concerned about the drop-off in business when
Springfield passed its no-smoking ordinance. And there was some drop-off for a
couple of weeks. Then he began seeing faces that he's not seen for some time.
One lady (not really a "lady" but a mouthy old trout) told him the she and her
tribe had quit coming to eat because of the smoke. But, now that it was
smoke-free .... A number of my circle made similar comments. So, it evens out.

When we were staying in Canandaigua for the "Fly Fest" picnic at Burt and
Shirley's we could hear the cars at the race track - inside the motel room with
the glass teat blaring away. I (and Georgia, who is also a motorsports fan) was
tempted to go watch the races. By the time we got to Newark we couldn't hear
the snarl of the gasoline bullfighters any longer.

I note, too, the the Canandaigua speedway is in the news in a tragic way.

      Title: Tasmanian Ocean Trout w/Dill Mayonnaise
 Categories: Seafood, Herbs, Sauces
      Yield: 4 Servings
 
           Ocean trout filets

MMMMM---------------------------STOCK--------------------------------
           Trout skin, bones and head
           Little chopped onion
           Little chopped celery
           Herbs of your choice

MMMMM--------------------------GARNISH-------------------------------
           Mayonnaise
           Dill; fine chopped
 
  Filet the ocean trout. Make up a fish stock using fish
  head, skin and bones, chopped onion and celery and herbs
  of your choice. Strain stock and discard solids. Bring
  remaining liquid to boil, then pour it over trout filet
  portions. Allow them to rest on the corner of the stove
  for about seven minutes.
  
  To serve: place filets on a mayonnaise that has been
  slightly diluted with the reduced fish stock.
  
  Add chopped dill to taste.
