Old Bay - the label doesn't list bay at all (the name is
said to come from the name of a ship that used to sail
the Chesapeake); the stuff tastes like celery salt with
some additional green notes. In my memory, I thought there
were brown, paprikoid, and nutmeggy notes as well but
might be confounding it with

The Spice Mill Chef's Choice South Shore Seasoning -
heavy celery salt, some of the Christmas spices my maybe
misplaced memory of Old Bay remembers. Cloves and nutmeg.

Herbamare - from the label, some kook doctor formulated
this as a health aid as well as a seasoning. Well and
good, it's salt with vegetables, mostly celery and onions,
added. Strong dried celery and herb flavor, not too bad
by itself but adds way too much green for me when sprinkled
on meat. Fairly costly as well.

Morton's Nature's Seasons - strong pepper taste with a
bit of stale herb in the background. I suspect the reason
for this stuff's existence is that substituting it shake for
shake for salt would decrease the sodium hit by about a third.
You can do it yourself, more or less, see below, but why not
just use garlic salt, which tastes better?

McCormick garlic salt, tasted as a control, was just what
you'd expect and was least objectionable and packed the
most flavor punch. It is in fact better than some of the
generic garlic products I've tried (and in fact tend to
buy), as it's a cleaner garlic taste, without any of that
smoky roasted taste you sometimes get from the stuff you
buy at the odd lots store.

Herbamare substitute
Categories: seasoning, salt
yield: 1 batch

1/2 c sea salt
1/4 c dried parsley
2 ts onion powder
2 ts garlic powder
1 ts oregano
1 ts rosemary
1 ts thyme
1 ts sage
1 ts basil
1 ts celery seed
1 ts marjoram
1 ts dried kelp

Place all ingredients in a food processor and chop until
smooth and blended. Let the spices settle, then remove from
the food processor and store in an airtight container.
Use as called for in recipes.

Nature's Seasons substitute

yield: 1 batch

1/3 c granulated salt
1/4 c black pepper
1/4 c garlic powder
1/4 c onion powder
2 1/2 Tb sugar
1 Tb dried parsley
2 ts celery seeds

This is the procedure suggested for Herbamare substitute on
another site. It makes more sense than the one ehow.com gives
for this recipe.

Place all ingredients in a food processor and chop until
smooth and blended. Let the spices settle, then remove from
the food processor and store in an airtight container.
Use as called for in recipes.
